Old Town Scottsdale Getting New Restaurant and Rooftop Bar at Hilton

The new Canopy by Hilton Old Town Scottsdale will open its doors for the first time on Oct. 1 to both hotel guests and restaurant-goers.

The hotel features two new dining and bar options: Cobre Kitchen + Cocktails and Outrider Rooftop Lounge, which has a pool and bar with views of Camelback Mountain.

The 177-room hotel is located on the northeast corner of Marshall Way and First Street in Old Town’s arts district. Earlier this summer, Canopy by Hilton opened a new property with a restaurant and rooftop pool bar, Alter Ego and Alibi, in downtown Tempe.

The two dining venues at the Canopy hotel in Old Town Scottsdale are led by Patrick Gaudet, a Valley chef who most recently was chef de cuisine at The Boulders Resort and Spa in Scottsdale.

Cobre, the restaurant on the hotel’s ground floor, is a Southwest-inspired American brasserie. It will be open daily for breakfast, lunch and dinner and will feature both sit-down dining and a grab-and-go counter for pastries and coffee.

The menu includes dishes such as chicken chilaquiles, caramelized goat cheese salad and grilled tri-tip with pickled jalapeno chimichurri.

When the hotel first opens, there will be a scaled back menu for breakfast, lunch and dinner at Cobre. There will also be limited food and beverage service from Cobre at the seventh floor Outrider Rooftop Lounge.

Outrider features a bar, fire pit and views of Camelback Mountain. The pool and private cabanas will be available for hotel guests and those who purchase a resort pass.

The cocktail program at Cobre will feature cocktails made with spirits from Tucson-based distiller Whiskey Del Bac. At Outrider, the drink menu features a “7th Floor Fizz” made with gin, grapefruit and basil and a “Scottsdale Jenny,” which is a house margarita with carrot and mango.

Cobre Kitchen + Cocktails and Outrider Rooftop Lounge open Oct. 1.

Cobre hours are breakfast from 6:30-9:30 a.m., lunch 11 a.m.-5 p.m., and dinner 6-10 p.m. Monday through Sunday.

Outrider Rooftop Lounge limited hours are 11 a.m.-9 p.m. on Friday, Saturday and Sunday.
